Cookin’ some beans
Posted by: LizzieYesterday’s lunch turned out to be a giant success. Here are some simple directions:
Sautee a small onion over medium heat (about 1/2 cup chopped) for about 10 minutes in olive oil.
Drain & rinse a can of black beans, reserve liquid.
Add beans & liquid to the pan.
Put a capful of lemon juice, 1/2 tsp cumin, some garlic salt, pepper & salt. Turn heat to low & simmer about 15 minutes.
Cook some couscous or brown rice.
Serve beans over the grain.

This isn’t exactly what was in the cookbook, but I improvised having no fresh garlic. The boys enjoyed it immensely and so did I. And I’d just like to mention that my colon feels refreshed.
Dinner was also an adventure in pantry excavation. I knew I had all the ingredients to make macaroni & cheese, but I wanted to make it a meal. So I mixed in a can of tuna & a can of stewed Italian tomatoes before I put the mac & cheese in the oven. I meant to add corn, but forgot. We had corn on the side.
I wish I felt better. I don’t feel terrible and my voice is coming back, but I still have crap in my throat that I’m constantly having to cough & clear away.
I need to work on my July newsletter…sometime. Also, birthday cards/gifts. July is a busy month!
